Spicy Indian Style Quinoa- Corn Fritters
Uhhh WHATUP original recipe!
Jaykay I was inspired by this recipe http://www.gojee.com/food/links/spicy-corn-fritters but I’ve tweaked it quite a bit to make it healthier- and yummier! :) Its really easy to prep and cook; I was done in half an hour, so I recommend this if you’re looking for a quick, tasty dinner- I had this with sriracha sauce and steamed veggies.
Ingredients: 
2 ears cooked corn (cut off kernels with a sharp knife)
1 cup all-purpose flour
3/4th tsp baking soda
1/2 white onion, cut finely
2 cloves garlic, minced
1 large egg
1 medium carrot, cut into small pieces
4 tbs sliced parsley
1/4 cup cornstarch
3/4 cup water 
2 cups cooked quinoa
Olive oil
Spices: 
1 tsp salt
1 tbs garam masala (chaat masala will do)
1 tbs cumin seeds 
1 tsp coriander powder
2 tsp chilli powder
1 tsp black pepper
Cooking:
Mix the quinoa with the flour, baking soda, egg, water, and corn in a large bowl. Set aside. In a saucepan, heat a tablespoon of olive oil and saute the garlic, onion and parsley. Stirring, add the carrots and cumin seeds and saute over medium heat for 3-4 minutes. Mix this into the quinoa-flour dough, and add the rest of the ingredients and spices.
Heat about 1/8” of olive oil in a deep saucepan, and once it is hot, drip a small glob of the batter. Use two spoons to turn the fritter over once the underside is brown and crispy. One batch of batter makes about 20 fritters.
Serve hot with sriracha sauce or any kind of spicy chutney. Let me know how it goes :)
